Local Specialities There are two very important products of Vallerano: chestnuts and hazelnuts. The chestnuts here are again those known as “Castagna di Vallerano DOP”. There is always plenty of food including local delicacies such as ravioli, cakes, jams, marrons glacès, and roasted chestnuts. “Porchetta” of Vallerano (it´s a savoury, fatty, and moist boneless pork roast of Italian culinary tradition. The body of the pig is gutted, deboned, arranged carefully with layers of stuffing, meat, fat, and skin, then rolled, spitted, and roasted, traditionally over wood) is very popular throughout the region. We have speciality food, is famous for because it is so good. The Chestnut Festival also provides you with an opportunity to discover local produce. Not only will you find traditional wines but also Tozzetti, local biscuits with hazelnuts; jams/marmalades of varied fruit. You can eat Fricciolose (tinnest savoury crepès with Pecorino cheese; Ggulitonni – the dough done at home, Bbangarucci – it is the type bread with pork lard and other surprises . . . |
